Dandelion Greens Salad With Light Balsamic Vinaigrette
You know those pesky Dandelion Greens in your yard during the summer months? Well last spring we were visiting family in Ohio and came across a Dandelion festival. So we took the kids. They had so much food made from Dandelions you wouldn't believe! Dandelion Ice cream, Dandelion lasagna, Dandelion wine so on and so on. I was all so good and just YUM! So i got home and thought Why not put them to use in this awesome fresh Dandelion Green Salad! As long as they are well washed they are completely safe to eat and rather yummy with the right additions and dressing on them. We actually don’t have many growing in our area, but I found them at our local organic food store right beside the other salad greens at a very reasonable price. They do have a bit of a “bite” to them so they are not what I would consider a mild green. I found that a bright vinaigrette and fruit pairs best with these for a light summer salad.
DANDELION GREENS SALAD WITH LIGHT BALSAMIC VINAIGRETTE
Fresh Dandelion Greens
Diced Cucumbers
Diced Green Onion
Favorite add in(s):
Sliced Ripe Strawberries
Toasted Almond Slices, Walnuts or Pine Nuts
Mandarin Oranges
Golden Raisins
Crispy Bacon
HONEY BALSAMIC VINAIGRETTE
¼ Cup Balsamic Vinegar
¼ Cup Honey
1 Tablespoon Extra Virgin Olive Oil
1 Teaspoon minced roasted garlic
1 Tablespoon Toasted Sesame Seeds
1 Tablespoon Soy Sauce
In a small bowl whisk together vinaigrette until well blended. Pour over Dandelion Greens and choice of vegetables, fruit and nuts.
