Get patriotic with this yummy ice cream cookie sandwich recipe. During the summer ice cream, anything is a hit at my house. Well ok, anything cold, popsicles, ice cream, slushies, other frozen drinks. Any way we can think of to cool off! Us adults even switch to iced coffee! So it really shouldn't be a surprise we are slightly addicted to ice cream with our cookies.
This addiction is what fueled the need for this ice cream cookie sandwich. We have experimented and had some home runs and some utter fails. One we love around July 4th is this red white and blue version! Oh and here's how to keep your ice cream cold at a picnic in case your 4th of July is on the go.
Red White and Blue Ice Cream Cookie Sandwich Recipe
Ingredients
1 cup Butter, Softened (2 sticks)
1/2 cup Powdered Sugar
2 cup Flour (I used white)
1/2 cup Blue & Red M&Ms
Ice Cream (any flavor that is white)
Red and White Sprinkles
Directions
Preheat oven to 350 degrees. Line 2 baking sheets with baking mats or parchment paper.
Cream together the butter & the powdered sugar. Then slowly add in the flour and continue mixing until dough forms.
Dust work surface with flour or powdered sugar. Roll out dough to about 1/4″ thick and cut out circles you can also do squares. Place on baking sheets.
Top each cookie with red and blue M&Ms candies.
Bake 13-15 minutes or until they are pale golden color. Allow to cool on baking sheets or wire racks.
Set out ice cream to soften.
Scoop ice cream on to a cookie. Press another cookie gently on top to make a sandwich. Make sure candy side it on the outside! Then roll the edge of the sandwich in sprinkles.
Place in freezer to set. Then eat and enjoy!
