I am always looking for great new recipes to use on the grill but can be cooking inside during the winter months too. Hubby doesn't appreciate me making him stand in a foot of snow like we had a few weeks back and gill our dinner. Been there done that and hubby will run away if i make him do THAT again (EEK!)
These Southwestern Shrimp Skewers can be customized with whatever veggies you have on hand. but the peppers, limes and tomatoes are the best combination in my opinion! If you don't like too much spice use bell peppers if you are a dare devil try a ghost pepper!
Southwestern Shrimp Skewers
Funny story. When I was pregnant with #4 hubby was trying to help by making dinner and though he would add the same spices to the rice as he did the skewers… but he tripled it. Now I like a BIT of spice but when I'm pregnant spice is 10x as it is. I about died! Needless to say i told him to just stick to the recipe!
INGREDIENTS
1 lb Medium Peeled Deveined Shrimp
5 oz Cherry Tomatoes
2 Limes
4-5 small Peppers
2 tbsp Olive Oil
1/4 tsp Cayenne Pepper
1/4 tsp Cumin
1 tbsp chopped Cilantro
Sea Salt and Fresh Ground Pepper to taste
Skewers
DIRECTIONS
Preheat oven to 400.
Cut each lime into 8 wedges.
Split and remove seeds from each pepper.
Place lime wedge, then shrimp, then tomato, then shrimp, then pepper, then shrimp, then tomato, then lime wedge on each skewer.
Place on oiled rack on baking sheet.
Drizzle with olive oil.
Season with salt, pepper, cayenne and cumin.
Cook for 8-10 minutes, until shrimp are done.
Serve over rice and garnish with cilantro.
