Tropical Suncake with Strawberry Organce Sauce

1/2 cup all purpose flour
4 tsp. sugar
1/2 tsp.  baking powder
1/4 tsp. salt
4 eggs, seperated
1 1/3 cups ricotta cheese
1/2 cup milk
1 tbsp. grated organge peel

Strawberry Orange Sauce:

2 cups frozen strawberries
1/4 cup orange juice
2 tbsp. sugar
2 tsp. grated orange peel

In a Large bowl combine flour, sugar, baking powder, and salt. Combine egg yolks, cheese, milk, and orange peel. Stir into dry ingredients until moistened. beat eggs whites until stiff peaks form, fold into batter.

Pour batter but 1/4 cup cupfuls onto greased hot griddle, turn when bubble form on top. cook until second side in golden brown.

Meanwhile in a small saucepan, combine the sauce ingredients. Bring to boil. reduce heat and simmer uncovered for 5-10 minutes or until syrupy. Serve with suncakes.
