Easy Sausage and Ham Jambalaya for Mardi Gras

Ingredients

  • 3 ribs celery finely chopped
  • 3 cloves of garlic minced
  • 1 large onion chopped
  • 1 green bell pepper chopped
  • 2 TBS olive oil
  • 1 can petite diced tomatoes undrained
  • 1 cup chicken broth
  • 2 TBS Cajun seasoning
  • 1 TBS salt
  • 1 tsp black pepper
  • 2 bay leaves
  • 1 lb diced ham
  • 1 lb smoked sausage or andouille
  • 6 cups cooked white rice

Instructions

  1. Heat olive oil in large saucepan over medium heat. Add onion, celery, and bell pepper. Cook until tender. Stir in garlic, tomatoes, chicken broth, and spices. Simmer for 20 minutes. Remove bay leaves, add in meat and rice, heat through.
