  • 1 box spice cake mix
  • 3/4 cup water
  • 1/2 cup oil
  • 3 eggs
  • 1 box vanilla pudding mix

Whoopie Pie Directions

  1. Preheat oven to 350. Line a baking sheet with parchment.
  2. In a mixing bowl, add cake mix, water, oil, eggs and pudding. Mix well.
  3. Using a 2 tablespoon size portion scoop, place dough onto prepared baking pan and gently spread it out to a 3" circle.
  4. Bake for 10-12 minutes or until set and center is no longer jiggly. Cool completely before frosting.

Frosting Directions:

  1. Beat cream cheese and butter together in a bowl. Add pumpkin puree and pumpkin pie spice and mix well. Beat in sugar, one cup at a time. Refrigerate until ready to use.

To Assemble Whoopie Pies

  1. Spread frosting onto the flat side of one pie. Top with another and dip edges into walnuts or sprinkle on the edges. Repeat until all whoopie pies are finished.
