Pumpkin Spice Cake Balls Recipe with a Caramel Sauce Drizzle

Ingredients
3 cups of whole wheat pastry flour (can sub with all-purpose flour)
3 large eggs, room temperature
1 tsp salt
2 tbsp butter, softened to room temperature
15oz can of pumpkin puree (not pumpkin pie filling)
1 tbsp pumpkin pie spice mix
Caramel Sauce
For The Frosting
4oz cream cheese, softened to room temperature
4 tbsp butter (1/2 stick), softened to room temperature
1 and ½ cups powdered sugar
1 tsp. vanilla extract
For The Chocolate Coating
1 bag chocolate chips
2 tbsp shortening
1 tbsp milk
Directions
Preheat oven to 350 degrees.
Cream together the eggs, butter, and pumpkin puree.
Add salt and gradually add the flour.
Using a greased 9×13 pan, add cake batter to pan.
Bake for 30 minutes or until a toothpick comes out clean.
Let the cake completely cool down.
After the cake has cooled down, using your hands break up the cake. (That is the fun part)
Cream together the frosting ingredients and mix with the broken up cake. The cake and frosting combined wit make it sticky so you can roll it into balls.
Line a baking pan with parchment paper. You will need multiple pans.
Roll the cake into medium balls. Place on parchment paper.
Place the chocolate chips, shortening, and milk in a medium saucepan and melt on medium-low.
Dip and roll each cake ball into in the melted chocolate.
Drizzle the cake balls with caramel sauce and sprinkles.
