Apple Stuffed Pork Chops
Apple is one of the most popular and delicious flavors of fall, and it just happens to pair wonderfully with pork. I wanted something a little different from our standard pan fried pork chops so I went with a stuffed and slightly sweet flavor. Whether you serve these as your main dish, or as appetizers they are sure to be a hit at the table. If you like a sweet and savory dish this one will work from a hurried Tuesday to a leisurely Sunday meal.
Ingredients:
- 8-10 Thin center cut pork chops
- 2 baking apples
- 1 tsp. cinnamon
- 1 Tbsp. homemade brown sugar
- ½ tsp. cayenne pepper
- salt and pepper to taste
- olive oil for pan
Directions:
Preheat oven to 350
Peel, and slice apples.
Season chops on both sides with salt and pepper.
Combine brown sugar, cinnamon, and cayenne pepper in a small bowl.
Place 2-3 apple slices in the center of each pork chop and sprinkle with brown sugar mixture.
Start at one end and roll pork chops around apples, secure with a toothpick.
Drizzle a large pan with olive oil, heat over medium.
Brown pork chop rolls on all sides for 1-2 minutes.
Transfer pork chops to a baking dish and bake for an aadditional 5-7 minutes, depending on thickness to be sure they are done all the way through- I have the butcher cut my chops extra thin, so they really dont need this final step but if you prefer yours thicker you will want to do this to assure they are cooked through.
I like to serve mine with applesauce and mashed potatoes.
To make appetizer sized rolls slice pork chops in half lengthways before stuffing and rolling.
