Thanksgiving is just around the corner and with that comes the need to use up leftover turkey. I pulled together my favorite 5 Turkey Leftover Recipes here for you to use. Sandwiches and regular leftovers are great but these are fun ways to kick it up a notch and create something everyone in the family will love that won’t taste like the traditional turkey meal we are so used to at that point.
TURKEY POT PIE
Mix together cream soups, milk, pepper and garlic in medium bowl. Add in turkey and mixed vegetables. Pour into shallow baking dish or deep dish pie plate and top with ready-made pie crust. Bake at 375 degrees until bubbly and crust is golden brown.
In medium skillet, heat olive oil. Add turkey and seasonings and cook stirring occasionally for 7-10 minutes or until heated through and bits of turkey are crisp. Serve with traditional taco sides.
TURKEY NOODLE SOUP
- 3 Cups Shredded Turkey
- 3 Stalks Celery Chopped
- 1 Small Onion Chopped Fine
- 2 Whole Carrots Cleaned & Chopped
- 1 Bunch Parsley Cleaned and removed from stem
- 4 Cups Low Sodium Chicken Broth
- 4 Cups Water
- 2 Teaspoons Minced Garlic
- 2 Teaspoons Black Pepper
- Salt to taste I add after cooking
- 1 12 oz Package Egg Noodles
In large stockpot, bring water and chicken broth to a boil with onions, celery and carrots. Cook for 15-20 minutes. Add in turkey, parsley, garlic and pepper. Simmer on medium heat for 10 minutes. Add in egg noodles and cook additional 8-12 minutes or until tender.
TURKEY “FRENCH DIP” SANDWICH
- Sliced Turkey Breast
- Crusty Bread we prefer baguettes or French loaves
- Swiss Cheese Slices
- Dijon Mustard
- Beef Broth for dipping
Toast bread and layer turkey and cheese topping with a bit of Dijon mustard. Heat through in toaster oven or oven and serve with beef broth for dipping.
TURKEY FRIED RICE
In large skillet, heat rice, turkey and vegetables in Sesame Seed Oil until well blended. Add soy sauce, garlic and ginger and cook for 4-7 additional minutes.
