Less work than a homemade apple pie, and probably a little better for you these Apple Pie Oatmeal cookies are the perfect tasty treat to cap off dinner, a warm and sweet after school treat with milk, and begging to be enjoyed with a good cup of coffee. They come out moist and flavorful-making them a favorite around my house.
Apple Pie Oatmeal Cookie Recipe
This recipe came to be a few years back when we went apple picking and had more apples than we knew what to do with. So we started googling and found a recipe for apple cookies. We have since tweaked it and made it out own and it has become a family favorite.
Ingredients:
½ cup Applesauce, chunky
1 cup Oatmeal
1 cup All-purpose flour
2 Tbsp. Butter, melted
1 tsp. Cinnamon
½ tsp. Nutmeg
1 egg
½ cup homemade brown sugar
1 tsp. Vanilla
1 ½ tsp. baking powder
pinch of salt
Directions:
Preheat oven to 350℉.
Mix together flour, oatmeal, cinnamon, nutmeg, brown sugar, baking powder, and salt.
In the bowl of hand or stand mixer combine applesauce, egg, butter, and vanilla until well mixed.
Add dry ingredients to wet a little at a time to combine well.
Scoop by heaping spoonfuls on to baking sheet lined with parchment paper or a baking mat.
Bake for 14-15 minutes until edges are golden brown.
Allow to cool on pan for 5 minutes before moving to a cooling rack to finish.
