Ok, seriously two works for you. Bacon. Vinaigrette. BAM! Did I just rock your world? Because it should have and it will! This is the best green bean recipe I have ever had, and I think it’s all because of the bacon vinaigrette.
The Best Green Bean Recipe With A Bacon Vinaigrette
This site dish is one our favorites. It might have to do with the bacon I won’t lie. I find it best with fresh green beans and not canned ones. Let’s be real canned green beans just don’t measure up to fresh or even frozen.
If you like things a bit spicier, you can use a spicier mustard. I even like to spice things up and switch to Dijon mustard now and then. Ok, I used it once when I ran out of whole-grain mustard, and I liked it just as much.

2 pounds trimmed green beans (get the kids to help!)
6 slices bacon
2 sliced shallots or a half of a red onion
2 tablespoons whole-grain mustard
2 tablespoons cider vinegar
2 tablespoons olive oil
kosher salt and black pepper
Bring a large pot of water and one tablespoon of salt to a boil. Add the green beans and cook until just tender. Normally this takes about 4 to 5 minutes.
Drain the green beans and then run them under cold water to stop them from cooking any more. Then transfer to a serving bowl.
While the green beans are cooking, in a medium skillet, cook the bacon over medium heat until desired crispness, I like mine crispy, hubby not so much. This will take about 6 to 8 minutes maybe a bit more. Then transfer the bacon to a paper towel-lined plate. Let the bacon cool, and then break it into pieces.
Make sure to save 2 tablespoons of the bacon drippings from the skillet. Return bacon drippings to the skillet and turn to medium heat. Add the shallots and cook for 1 minute constantly stirring.
Then stir in the vinegar, mustard, oil, ¾ teaspoon salt, and ¼ teaspoon pepper. Make sure to mix it well!
Add to the green beans, along with the bacon, and toss to combine.
