I know getting my kids to eat their veggies is a task. They don't mind potatoes in french fry form and they don't mind corn but anything else? FORGET IT! So I have become VERY sneaky. My kids think it is a great reward to get brownies as a snack or for dessert, what they DON'T know (and please don't tell them!) is that those brownies are PACKED with Zucchini!!

Chocolate Zucchini Brownies
Ingredients:
2 large eggs
½ cup butter, melted
1 cup chocolate sauce, alternately you can use semi-sweet chocolate chips
½ cup additional chocolate sauce
½ cup of sugar
½ cup homemade brown sugar
1 cup shredded zucchini
1 tsp vanilla extract
¼ tsp salt
½ cup flour
Preheat oven to 350 F. Grease an 8×8 baking pan.
In a large bowl combine flour, sugar, brown sugar and salt. In a medium sized bowl combine eggs, vanilla, and 1 cup of chocolate sauce and butter. Fold wet mixture into dry mixture and combine completely.
When all lumps have been removed fold the zucchini into the brownie mixture and stir well.
Pour batter into greased baking pan and set timer for 8 minutes. Remove brownies from the oven and drizzle the additional chocolate sauce over the top of the brownie batter. Use a knife to pull the sauce back and forth over the top of the brownie. Return brownies to the oven and bake for an additional 15 minutes.
Use a clean fork to test for doneness. Cut and enjoy!
