Quick & easy dinners for my family that also include veggies are a priority for me. We all know that space is at a premium in an RV, it's a sacrifice we made to live our life. So it has forced me to get creative. Besides cooking more with our slow cooker, we have also started making more one pot meals.
One Pot Meals – Kielbasa and Potatoes
We love kielbasa for dinner but it is not the healthiest of meats, so I serve it in smaller portions by offsetting it with potatoes and green beans. What we end up with is a delicious dish loaded up on flavor that is hearty and filling, even the kids eat it up. If this sounds and looks good to you go ahead and gather up your ingredients and let's get this one dish dinner on the table!
Ingredients
1 lb. kielbasa
4-5 medium red potatoes
2-10 oz. cans green beans
½ onion
2 cloves garlic, crushed
1 T. butter
1 tsp. Black pepper
½ tsp. Salt
Directions
Wash and peel potatoes if desired. I love the flavor of potato skins, so I leave mine on and just slice off the eyes.
Chop potatoes into small bite sized pieces, about the size of your thumb.
Finely dice onion.
Slice kielbasa into ½” thick coins, then cut in half.
Place butter, potatoes, and onions in a large saucepan over medium heat, frequently stir until potatoes begin to brown.
Stir in kielbasa, garlic, pepper, and salt. Continue to saute and stir until kielbasa is well browned.
Reduce to heat to low, cover and cook for 10-15 minutes until potatoes are fork tender.
Rinse canned green beans well and add to pan, cooking until just heated throughout.
I have also made this dish and stirred in fresh spinach right at the end, squash when the potatoes go in, and corn for flavor variety.
