Peppermint Patty Cookies are Chocolate Chip Cookies Stuffed with a Peppermint Patty
My biggest tip is to make a double batch of these Peppermint Patty cookies, they tend to disappear so fast! Especially if you are taking them to an event. It's like you try one and before you know you have eaten 5 of them!
Ingredients
2 whole sticks of softened butter
2 cups of white Sugar
2well-beaten eggs
2 Tsp. Vanilla
2 TBSP strong coffee (cooled to room temperature)
2 1/2 Cups Flour
1 Tsp baking soda
1/2 Tsp. salt
Directions
Preheat oven to 350 degrees
Mix together sugar, flour, salt, cocoa, soda, and baking powder. Add butter and cream together mix well then add eggs, vanilla, coffee, and mix. Fold in Chocolate Chips
Ball together 1 TBSP of cookie dough and flatten with your hands. Bake on wax papered covered cookie sheet (or one with a baking mat), 3 inches apart 350 degrees for 9 minutes.
Cookies yield about 3 dozen, so cookie sandwiches will yield about 15 cookies.
As soon as you remove the cookies (so they are still hot), place a patty on a hot cookie and add another hot cookie to the top. They peppermint patty will melt a little bit but does not lose integrity. Place on wire rack until cool.
Drizzle melted chocolate over the top of the cooled cookie by heating 1 cup of milk chocolate chips in a double boiler. Use a spoon to scoop some chocolate and drizzle over the top of the cookie.
