I always have so much leftover produce at the end of the week. Mostly because we do not have a lot of places to store it at the end of the week. I am always challenged to create meals out of our leftover produce. I love keeping a running list of cheap recipes that can be made.
10 Cheap Recipes You Can Make Out of Leftover Produce
Vegetable Soup – You know that you love vegetable soup and so do we around here. There are no specific requirements when it comes to what veggies to put in veggie soup. Put whatever you have and run with it.
Veggie Pizza – Pizza is a favorite around here. Veggie pizza is super easy to make and you get to use up that leftover produce. We love using this pizza cast iron pan!
Homemade Pot Pie – Things like corn, peas, green beans, and so on can be made into the filling for pot pie. Such a fun and easy recipe you can make.

Quick Smoothies – If you don’t have time to sit down for breakfast and want to make something quickly. Stick that leftover produce in your blender and make a smoothie out of it.
Garden Salads – Chop up all the leftover produce you have in your kitchen and make garden salads out of it. You can easily grill some chicken or steak and have it as the topping for your protein.
Roasted Veggies w/ a side – Not sure of what to make, but want to keep it cheap?! Grab a side or protein and roast some veggies. You won’t regret making roasted veggies ever! We love this Green Bean Recipe With A Bacon Vinaigrette.
Fruit salad– I often make this for breakfast for us. Cut up the fruit and mix it together in a bowl and you have an amazing cheap meal made from leftover produce.
Filling in a Casserole – Making a casserole is always my go-to when it comes to making a cheap meal. I love using leftover produce in these casseroles I make! We love this Vanilla Blueberry Overnight French Toast Casserole.
Stir-fry– Making stir fry really isn’t that hard and there are no right or wrong rules to it. Throw some veggies in a frying pan, mix in some chicken, soy sauce, and you have a yummy meal.
Veggie bake – Cut up those veggies and put some cheese on top! I love adding salt and pepper, but everything tastes super yummy with cheese on top.
