It’s December. The race to Christmas is on! Stacy over at Adventures In Coupons and I have teamed up to bring you 12 days of Christmas Cookies! Each day one of us will bring you a yummy new cookie recipe! For Day 11 we have Peppermint Snow Cookies. These were invented one year when I went to make snowball cookies and they came out flat. We liked them better and have been making them this way ever since!

Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
1 teaspoon Peppermint Extract
Topping
1/2 cup powder sugar
3 candy canes crushed up

Directions
Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg, vanilla, and Peppermint extract. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into 1/2 inch balls, and place onto ungreased cookie sheets.
While cooking mix together powdered sugar and crushed candy canes.
Bake 8 to 10 minutes in the preheated oven, or until golden. Cool for a minute then sprinkles with powdered sugar/Candy cane mixture. Let cool.
Peppermint Snow Cookie
