Getting my family around the dinner table at night is a priority for me. I think that many kids need that time to wind down and feel that the focus is on them and talking about everyone's day. I love having my kids eat home cooked meals. If I can talk about how I remember eating something as a kid my kids are far more likely to give it a try. Growing up I remember my mom's go-to meal was this easy meatloaf recipe, Since my childhood, I have changed the recipe a bit, concocted my own topping for it, and it is now my favorite recipe for meatloaf and still takes me back to my childhood!
Easy Meatloaf Recipe – My Favorite Recipe for Meatloaf
This Meatloaf is easy to make and cooks quite quickly. I like even making this the morning of before my day gets really crazy and keeping it in the fridge until it is time to bake. Then when it's time just pop it in the oven and bam dinner is ready. It is a nice and easy way to keep dinner on track. Our favorite sides to serve this with The Best Green Bean Recipe With A Bacon Vinaigrette and my 7 Up Biscuits Recipe.
I highly recommend having a metal loaf pan to cook your meatloaf with. You can pick these up for pretty cheap on Amazon, for about $5 or less. I just find the metal ones cook better. Ok now on to the recipe!
Ingredients
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs (or more to taste)
1 teaspoon Worcestershire sauce
salt and pepper to taste
Topping
2 tablespoons homemade brown sugar
2 tablespoons prepared Dijon mustard (TRUST ME!!)
1/3 cup ketchup
1 teaspoon Worcestershire sauce
Process
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk, breadcrumbs and Worcestershire sauce.
Season with salt and pepper to taste and place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.
Topping:: In a separate small bowl, combine the brown sugar, mustard, ketchup, and Worcestershire sauce.
Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour
** I will add more breadcrumbs if needed since we like a firmer meatloaf. This is a personal preference.
