When I was trying to lose weight before I found out I was preggo, I was looking for a healthy way to make my favorite foods. I'm a southern girl, and I can't live with out a good meatloaf. So on my hunt to find a healthy alternative I found this great recipe. It is sweet and has the perfect amount fod tang and is only 265 calories a serving! Over 100 less than traditional meatloaf!
3 tablespoons packed homemade brown sugar
1 cup ketchup
1 1/2 pounds lean ground beef
3/4 cup low-fat (1%) milk
2 eggs
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 yellow onion chopped
1/4 teaspoon ginger
1/2 cup breadcrumbs (possibly more if you like a more form meatloaf)
1 teaspoon parsley
Preheat oven to 350 degrees F. Lightly grease a 9×5-inch loaf pan.
Press brown sugar in the bottom of prepared loaf pan and spread 1/2 ketchup over sugar.
Mix ground beef, milk, eggs, salt, ground pepper, onion, ginger, bread crumbs, and parsley thoroughly in a mixing bowl. Shape into a loaf and place ketchup on top.
Bake in preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F.
Keep in mind the thicker your meatloaf the longer it will take to cook.
This produces 8 servings at 265 calories a serving

Your Healthy Brown Sugar Meatloaf.. sounds really good but I don’t see how much onions, ginger bread crumbs and parsley to use
