I wanted to share our easy weeknight dinner of Rosemary Honey Mustard Chicken. We love chicken and we love honey mustard. Why not combine the two into a healthy and easy dish for dinner?
We do recommend using an Organic Honey or a local to you honey for this dish. Additionally, if you have access to citrus honey you will have an even richer and more floral flavor you will love. I picked up some Orange Honey and It's my go-to for recipes! But if you have to use a simple “off the store shelf” honey you will not be disappointed! This is also an easy last-minute dish that although extremely simple to create has that “flare” that impresses. A great dish to whip up when you are having company over at the last minute.
Rosemary Honey Mustard Chicken
Ok here is it, it's really easy, pull ingredients, mix pour bake.
Ingredients
1 lb. Boneless Skinless Chicken Breasts
1/2 Cup Organic Honey
1/4 Cup Dijon Mustard
1/4 Cup Yellow Mustard
1/4 Cup Fat-Free Mayonnaise (Miracle Whip may be substituted as well)
2 Teaspoons Dried Rosemary
1 Teaspoon Dried Basil
1 Teaspoon Garlic Powder
Salt & Pepper to taste
Directions
Preheat the oven to 350 degrees. Spray shallow baking dish or casserole with nonstick spray. Rinse and pat dry boneless skinless chicken breasts. In a medium bowl, mix together honey, mustard, mayonnaise, and herbs.
Lightly season chicken breasts with salt, pepper, and Garlic Powder. Place chicken breasts in a baking dish and pour sauce over top. Make sure the chicken is completely covered.
Cover dish with aluminum foil. Bake for 20 minutes. Remove the dish from the oven, remove the aluminum foil, and bake uncovered for an additional 10-15 minutes.
Note: Time to bake varies depending on the thickness of the breasts. If using the whole chicken breast as I did in this recipe, you will want to cook for the full length of time to ensure cooked through. If using boneless skinless tenderloin strips or even cutting whole chicken breasts into “nuggets” your cook time will decrease significantly. I highly recommend purchasing a meat thermometer to use when cooking poultry to verify that the meat has reached appropriate temperatures for safety.
