As a mom of 5, I LOVE easy Instant Pot recipes! They are easy and forgiving of me when I forget to pull the meat out of the freezer, which is several times a week! This easy Instant Pot Lasagna has quickly become a family favorite!
Easy Instant Pot Lasagna Recipe
About 3 years ago I broke down and bought an Instant Pot and ditched my traditional slow cooker and I haven't looked back. You can make just about anything in your Instant Pot. It has so many settings I used it to make rice, as a slow cooker, and I even have recipes for Instant Pot yogurt!

I even learned I am able to can jam in my Instant Pot. Talk about easy! my Instant Pot gets so much use now it pretty much stays on my kitchen counter. I love that thing! So much so that I invested in an Instant Pot Assecory Pack that comes with a steamer and a rack to hold eggs, and a cheesecake pan, and so much more!
Now on to the super easy Instant Pot Lasagna.
Ingredients
1 Large Jar Pasta Sauce
16oz Shredded Mozzarella Cheese
1 egg
16 oz Cottage Cheese (Ricotta can be used in place of this)
Lasagna Noodles (I used regular noodles NOT oven ready)
1 Tbs Italian Seasoning
1 Tsp Garlic Powder

Directions
Place 1-1.5 Cups water in the bottom of the pot. Place rack in pot. Make a “tray” out of aluminum foil (If you have a dish that fits in your pot and can sit on the rack you can use that as well. I just lined the inside well with foil.

Mix shredded mozzarella, egg, cottage cheese, and seasoning in a bowl and set aside. Add 1/3 of the sauce on the bottom of the foil (Your first layer) Break lasagna noodles (Uncooked) to fit and layer
Add 1/3 of the sauce on the bottom of the foil (Your first layer) Break lasagna noodles (Uncooked) to fit and layer on top of sauce.
Add 1/3 of cheese mixture on top of noodles, top with sauce and repeat layers until sauce and cheese mixture is used up.
Place lid on the pot and close vent. Set manual setting for 40 min, allow pressure to release naturally. If served immediately lasagna can be a bit loose. Allowing to set for a 30min-1 hour in the pot is ideal.
