Egg salad – Boiling eggs and making egg salad has to be one of the easiest and cheapest meals out there. Plus, you can eat it on crackers or bread. If you have any leftover chicken, you can even make our popular Copycat Chick-Fil-A Chicken Salad Sandwich.
Egg drop soup – While this may be a bit more complicated to make, it’s still simple and made from eggs.

Egg sandwiches – One of my favorite meals ever is scrambled eggs on bread. Add some cheese, and it’s an awesome meal. Serve with some veggies or fruit.

Eggs Benedict– An unusual dinner that is cheap, but delicious. Open up an English muffin, place bacon, cheese, and a poached egg on top. It makes for a super delicious dinner.

Oh my, eggs are my go-to. I always have them in the fridge. My favorite meal for anytime of the day with eggs is a sweet potato hash. I can season it differently every time and add in bacon or sausage and some other veggies. It’s hearty, cheap, and good eats!

I have chickens so I always have eggs. I make eggs with potatoes and add whatever I have leftover. Such as ham, taco meat, sausage, chicken, or turkey. I know this is going to sound weird but daughter loves to put pancake syrup on it. So one day I came up with pancake muffins. I use my muffin tin. First I make the potatoes and eggs with meat. Then make your pancake batter. I pour the batter in the first and then top it with the egg mixture. Bake for 10 minutes at 350. Fun and easy to make.

Always looking for new egg ideas! We like boiled eggs with S&P as a lunch protein. Egg burritos. Chef salad (with boiled eggs). Camel eye toast. DIY egg “mc*muffins”. Adding (boiled) egg to potato salad. And adding an egg or two to an asian rice bowl recipe. Some folks like pickled eggs….I can’t quite get there, myself, lol.
