Quick & easy dinners for my family that also include veggies are a priority for me. We all know that space is at a premium in an RV, it's a sacrifice we made to live our life. So it has forced me to get creative. Besides cooking more with our slow cooker, we have also started making more one pot meals. When I was trying to lose weight before I found out I was preggo, I was looking for a healthy way to make my favorite foods. I'm a southern girl, and I can't live with out a good meatloaf. So on my hunt to find a healthy alternative I found this great recipe. It is sweet and has the perfect amount fod tang and is only 265 calories a serving!
