This particular recipe was made using the Ninja Foodi Instant Pot. You can use an Instant Pot you prefer but I wanted to make sure you knew which I used in case you need to adjust settings for yours.
I don’t have any beef bouillon cubes; can I use broth instead?
Yes! You can use one cup of broth per bouillon cube, so just add two cubes of beef broth and you’ll be good to go!
Do I really need to sauté the outside of the roast before I cook it?
This isn’t a necessity, but it does help bring out some of the roast beef flavors and give it a little more texture. Your roast beef will still taste great if you don’t sauté it though.
Why can’t I add the veggies at the same time as the meat?
You’re better off waiting to cook them at the end so they don’t become too soft and mushy.
Some pot roast recipes tell me to cut my roast in half before cooking it, do I need to do that for this one?
As long as your roast fits into your pressure cooker you are good to go. If it is a tight fit, you can always cut it in half and rearrange the pieces. Don’t worry about not having room for the veggies. The pressure cooker causes the roast to shrink a little bit.

Chuck roast beef is easily the most affordable and easiest to get cut for this recipe; however, if you are looking to splurge a little bit, a sirloin roast works great as well and is extremely tender.
What you need to Make Instant Pot Roast Beef
2-3 pound chuck roast
1 tablespoon vegetable or canola oil
1 cup water
½ teaspoon salt
½ teaspoon pepper
½ teaspoon sage
½ teaspoon garlic powder
½ cup diced baby carrots
½ cup diced yellow onion
½ cup diced celery
COOK TIME: 70 minutes

How to make Instant Pot Pot Roast
Preheat your instant pot on the sauté setting on high for 3-4 minutes and add oil.
Place the roast in the Instant pot and sauté on each side for 3 minutes.
Remove the roast from the Instant Pot and add water and beef bouillon cubes. This will enhance the flavor of the roast and help you scrape off any pieces of the roast that are stuck to the bottom of the pot.
Place the roast in the pot, add your seasonings, and pressure cook on high for 60 minutes.
After 60 minutes, quick release the steam, add your veggies/ potatoes, and pressure cook on high for 4 minutes.
Quick-release the steam again, remove your roast and veggies/ potatoes from the pot, and serve.
