It's that time of the year and pumpkin everything is here. They are adding pumpkin spice to things that should not have pumpkin spice like chips. Seriously. Regardless every year we make these pumpkin spice truffles for friends and family and a lot for us and they are a huge hit. This is one of our favorite pumpkin recipes.
Easy Pumpkin Spice Truffles Recipe
Now when I say I see pumpkin spice everything I'm not joking. On the not-so-crazy end, we have pumpkin spiced almond nuts. Those who don't want to eat pumpkin spice now have pumpkin spice body care! Burt's Bees has a pumpkin spice chapstick and there is even a pumpkin spice scent lotion out now.

Now this recipe is perfect for get-togethers, gifts, and parties. We also like to give them out as just-because gifts. I have made my burlap mason jars before and filled them with these truffles for gifts, to teachers, co-workers, family, friends, and neighbors. Now on to the recipe.

Cream cheese
Powdered sugar
Canned pumpkin puree
Graham cracker crumbs
Pumpkin pie spice
White chocolate

How to Make Pumpkin Spice Truffles
In the bowl of a stand mixer, beat together cream cheese and powdered sugar until light and fluffy. Add pumpkin puree and mix again. Add in graham cracker crumbs, pumpkin pie spice, and 4 oz. melted white chocolate and beat until mixture resembles a soft dough, about 2-3 minutes.
Cover the bowl with plastic wrap and chill in the fridge for at least 1 hour. Pinch off a tablespoon-sized piece of truffle mixture and roll it into a ball. Place balls on a parchment paper-lined baking sheet and chill again for at least 30 minutes.
Dip truffles in 10 oz. melted white chocolate and let any excess chocolate drip off before returning them to the baking sheet. Sprinkle graham cracker crumbs over the truffles and let the chocolate set before serving.
