How to make Cheesy Squash Cups
Fill an 8×8 baking dish with 1″ water and place both squash halves in the baking dish.
Microwave on high for 15 minutes.
Remove from the microwave and let cool for a few minutes.
Gently scrape the squash out of the shell and into a large bowl.
Preheat the oven to 400 degrees and spray a 12 ct muffin tin with nonstick cooking spray.

Combine the squash, bread crumbs, shredded cheese, eggs, garlic salt, and salt & pepper. *If the mixture isn't thick, add a few bread crumbs until it thickens.
